MUSHROOM RICOTTA RAVIOLI

 

Filling for Mushroom Ricotta Ravioli

4 oz Mushrooms

2 Tbs Butter

2 tbs Olive oil

1 Tbs Truffle oil1 Tbs Minced Garlic

1 Tbs Chopped Shallots

1 tsp Thyme

1/2 tsp salt 

pinch black pepper

Pinch Truffle salt

1 cup Ricotta

1 cup grated parmesan cheese

1 egg

(1 cup of filling makes approximately 16 Ravioli)

Butter Sauce for Mushroom Ricotta stuffed Ravioli 

2 tbs butter

1 tbs olive oil

1 Tbs Truffle Oil

1 (1 Tbs) clove garlic minced

1 tbs chopped shallot

1/3-1/2 cup chopped Mushrooms

1/4 tsp salt or Truffle salt

pinch black pepper

1 Tsp Fresh or Dried Thyme

1/4 cup White wine
