WITH SAGE BUTTER

 

BUTTERNUT SQUASH RAVIOLI

​

Filling for Butternut Squash Ravioli

3 cups Butternut Squash pulled and chopped into 3 inch pieces

2 tbs butter

1/4 cup Cream (1/2 and 1/2 or heavy cream)

1/4 cup brown sugar

1/2 tsp salt

​

Place Squash in a pot of water and boil.

Boil until cooked thru and you can put a fork thru the pieces.

Drain and place back in pot. Add Butter,Sugar and salt,mix til incorporated then add cream.

Mix in and you are done.

Soo good.

(1 cup puree makes Approx 16 Ravioli)

 

Butter Sage Sauce for Butternut Squash Ravioli 

2 tbs butter

2 tbs olive oil

1 tbs chopped shallot

1/4 tsp salt 

pinch black pepper

1/4 cup Fresh Sage chopped

Makes enough for 10 +/- Raviolis
